ingredients
- 1 1⁄2 cups chopped peeled mangoes
- 1 1⁄2 cups chopped tomatoes
- 2 tablespoons minced cilantro
- 2 tablespoons lime juice
- 1 tablespoon finely chopped seeded jalapeno pepper
- 1 teaspoon minced peeled ginger
directions
- Combine all the ingredients in a glass or plastic container; cover and chill.
- Enjoy.

I am a huge mango fan. Found this recipe and it was excellent! A couple of changes I made was that I used an entire jalapeno pepper as we love heat. We are also not fans of cilantro so I used curly chopped parsley. Served it with chipotle marinated chicken breasts one night and a pork loin the next night. Couldn't throw out the leftovers so we used it as a dip with nachos the next night. So many uses for this recipe.
