This recipe is from Wyler's chicken bouillon.
- 1 cup uncooked instant rice
- 2 cups water
- 2 chicken bouillon cubes
- 1 (14 1/2 ounce) can diced tomatoes with mild green chilies
- 1 (15 ounce) can black beans
- 1 cup cubed cooked chicken
- 1 cup whole kernel corn
- In large pot, combine all ingredients except toppings.
- Bring to a boil; reduce heat.
- Simmer 15 minutes.
- If desired, serve with toppings such as sour cream, shredded cheese and/or tortilla chips.
