As with many recipe that call for potatoes, I didn't peel them but just diced them up after scrubbing them well! Also used just 1/4 teaspoon of salt & added a 1/4 teaspoon of lemon pepper, along with the other seasonings, & the soup was absolutely wonderful! A great cold weather treat, for sure!   1. Sauté onions in the butter in a large soup pot. Add carrots, potatoes, water, salt, parsley, thyme and bay leaf.
  2. Reduce heat to low and simmer for 30 minutes. Discard the bay leaf.
  3. Puree soup in a blender in small batches or with a stick blender. Return to the pot.
  4. Stir in milk. Season with salt and pepper to taste.
