Whole Wheat Cherry Scones

"From choosecherries.com. I'm looking for a way to use up some pie cherries from the farmer's market, and I think I may have found a winner here. Let me know what you think! Note: cooking time includes chilling time."

  • Preheat oven to 375.
  • Stir together flours, sugar, baking powder and baking soda. Cut in butter.
  • Stir in oats and orange zest. Place frozen cherries in a food processor and coarsely chop; set aside.
  • Make well in center of dry ingredients. Add buttermilk (or yogurt) and vanilla.
  • Stir several times; add chopped cherries, stirring until all ingredients are combined.
  • Knead 10 to 12 times. Chill 30 minutes or longer.
  • Pat dough into 10-inch circle approximately 1/2-inch thick. Brush dough with beaten egg white.
  • Cut into 10 pie wedges. Place scone wedges approximately 1-inch apart on greased cookie sheets.
  • Bake in 15 to 20 minutes, or until light golden brown.

  1. Made this recipe pretty much as given, but I did use butter instead of the Smart Balance & was also generous with the amount of orange zest used! Loved the flavor combo from the cherries & zest, as well as from the 3 flours that were used! Very, very nice, & definitely a winner! Thanks for sharing it!   2. First I want to say that the scones taste great. There are, however, a few discrepancies. The ingredients and the directions. The ingredients list oat flour (I used white), and yogurt that aren't mentioned in the directions. I know that the yogurt replaces the original buttermilk but someone else might not. I left the cherries large just because I like a real bite of cherry :D and cut them into rounds. Yummmmm
