Whole Grain Gingerbread Cake

This is really good and relatively healthy. Serve it hot out of the oven with vanilla ice cream or whipped cream; it's also good with warm applesauce.

Delish! I subbed 1/2 unsulphured molasses for half of the regular molasses, used 2 full teaspoons of cinn. & buttermilk substitute (milk & lemon juice) . This as a dense, moist bread with a very good taste. Tastes AWESOME with butter and honey!

Directions

  1. Stir dry ingredients (flour through wheat germ) together in mixing bowl.
  2. Add remaining ingredients and beat until smooth.
  3. Pour into greased 9x9 cake pan; bake at 350 for 45-50 minutes, or until tests done.
