A great winter warm up soup loaded with veggies in a light broth -- that kids will actually eat!
- 8 cups chicken broth or 8 cups onion broth or 8 cups beef broth
- 1 onion
- 3 stalks celery
- 1 cup frozen corn
- 1 cup frozen peas
- green beans (cut)
- 6 ounces tomato paste
- 16 ounces cheese tortellini (fresh)
- 14 ounces stewed tomatoes (optional)
- 1 garlic clove
- 1 pinch pepper

- Saute vegetables until onions are clear then add broth. Allow veggies to cook in broth until beans are slightly tender and add can of tomato paste (and tomatoes if using). Add tortellini and let boil until tender. Add seasons to taste and watch your kids eat their dinner!
