MAKE THESE MUFFINS! Amazingly good. I cut the sugar down to only 1/4 cup because I used sweetened vanilla soy milk (costco brand). -- they were plenty sweet. I used chopped walnuts instead of sunflower seeds and used 1 cup whole wheat flour and 1/3 regular. These would be great with dried cranberries or any other additions as well. I made mini muffins and baked for 15 minutes.

Excellent recipe-- produced moist, craveable muffins. I made a few mods based on what I had on hand: --Substituted soy milk for rice milk --Used an extra 1/2 cup sugar and 1/4 oil instead of apple sauce --added scant 1/2 cup wheat germ

I actually made these from my Dolce Vegan cookbook before I realized it was posted online. I'll have to agree with the other reviewer: these muffins are great (if you like bran muffins - which I do). I make them with artificial banana flavor instead of vanilla extract. On another note, there is a very strange thing that happens each time I make these. After about a day, my sunflower seeds turn bright green. The first time it happened, I threw the muffins out thinking that the seeds were too old. This time, I made it with brand new seeds, and the same thing happened. It's very weird! They still taste good and have that wonderful moist and fluffy texture. Thank you for posting the recipe!
