ingredients
- 1⁄2 cup coconut oil, melted
- 1⁄4 cup soymilk
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1⁄2 cup cocoa powder
- 1⁄2 teaspoon baking powder
directions
- Whisk the dry ingredients together.
- In a separate bowl, mix the oil and sugar together until all dissolved.
- Add in soy milk and vanilla extract and mix.
- Sift in the dry mixture into the wet and mix until JUST incorporated. Don’t overmix.
- Chill in the fridge for 20 minutes.
- Preheat the oven to 350 F (180 C) and line a baking sheet with parchment paper.
- Drop about 2 tbsp of dough onto the sheet and bake for 10 minute.
