  • Whisk the dry ingredients together.
  • In a separate bowl, mix the oil and sugar together until all dissolved.
  • Add in soy milk and vanilla extract and mix.
  • Sift in the dry mixture into the wet and mix until JUST incorporated. Don’t overmix.
  • Chill in the fridge for 20 minutes.
  • Preheat the oven to 350 F (180 C) and line a baking sheet with parchment paper.
  • Drop about 2 tbsp of dough onto the sheet and bake for 10 minute.
  • Enjoy!
