Turkey Burgers W/ Grated Zucchini & Carrots

"Found these in Real Simple and they are yummy. Succulent, moist, a nice departure from a normal burger and a great way to sneak some veggies in on your family. Served them with garlic fries, hot out of the oven. This is my little ode to Bergy, our Queen of Burgers."

  • Heat broiler.
  • In a large bowl, combine the turkey, zuke, carrot, garlic, thyme, s&p, and egg.
  • Form the mixture into 6 patties.
  • Heat 1-2 T oil in a pan over medium heat.
  • Cook the patties, turning once, until no trace of pink remains, 4-5 minutes per side.
  • Meanwhile, place the bread on a baking sheet and brush with remaining oil.
  • Broil until golden brown and crisp (a few minutes).
  • Transfer the bread to individual plates.
  • Combine mayo and lemon juice and spread about a tablespoon o each toast.
  • Top with lettuce leaves and burgers.
  • Can serve with mustard for an extra punch.

  1. Sorry we really didn't care for these. The dried thyme was too strong tasting and they fell apart very easily when flipped. I might try it again without the thyme and also try salting and draining the zucchini first so it's not so watery.
     
  2. These turned out good. I really loved the added veggies. DH wasn't as thrilled, he said they tasted "healthy". I think I'll try them again and add minced onion and experiment with the seasoning. Thanks for posting the recipe.
     
  3. Possibly the best burgers I've ever had! I got 5 good-size burgers out of the recipe and cooked them on my indoor grill for 5 min/side. Topped with sauteed mushrooms, cheese, lettuce, and a bbq-mayo spread. Delicious!

  5. This was surprisingly juicy and flavorful. My husband and I loved this recipe. It's just perfect. The only changes we made were using only 1 carrot and adding 1 fresh jalapeno pepper, finely chopped, and a bit of vidalia onion, finely chopped. Thanks so much Liza for bringing this recipe to our attention.
