- 425.24 g can cannellini beans
- 425.24 g can chickpeas
- 1419.54 ml water
- 3 medium onions, chopped
- 4 garlic cloves, minced
- 425.24 g can diced tomatoes
- 473.18 ml raw pumpkin or 473.18 ml sweet potatoes, peeled and cut into 1/2-inch cubes
- 9.85-19.71 ml harissa
- 4.92 ml paprika
- salt and pepper
- parsley, for garnish (optional)
directions
- In large pot, cook onions until translucent.
- Add remaining ingredients and cook until boiling. Reduce heat to simmer and cook, covered, for 20-30 minutes or until potatoes or pumpkin is tender.
- Sprinkle with parsley when serving for color, if desired.
