  1. Partially mash potatoes in a bowl with a fork until they begin to hold together.
  2. Add tuna, egg, salt, pepper and I teaspoon oil; stir to combine.
  3. Shape into four 1/2-inch-thick patties.
  4. Heat the remaining 2 teaspoons oil in a medium nonstick skillet over medium-low heat; add the patties and cook until browned on the first side, about 5 minutes.
  5. Carefully turn the patties with a wide spatula and cook until golden on the second side, about 3 minutes more.

I think we'll give these another try. The mix was hard to form because it was pretty watery. No way I was going to get them 1/2 inch thick so we lost the crispiness that would have been better if thiner. Good flavor though, I added chives and capers. Maybe we'll add some bread crumbs next time so that would be firmer and not fall apart. But a nice creative and easy dish.

Nothing could be easier than this. Easy, simple, and followed the directions to a tee. It made for a great mid-morning snacck. Made for newest zaar tag.
