- 1 cup carrot, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 2 tablespoons olive oil
- 8 cups chicken stock
- 15 ounces petite diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1⁄2 teaspoon dried chipotle powder
- 1⁄4 teaspoon oregano
- 1⁄2 teaspoon cumin
- 15 ounces black beans, drained and rinsed
- 16 ounces frozen sweet white corn
- 10 corn tortillas, cut into pieces
- 1 cup cooked chicken, diced
- 1 cup milk
directions
- Saute onions, carrots, and celery in olive oil.
- Add chicken stock, tomatoes, spices, beans, corn, and tortillas. Bring to boil and reduce to simmer for 20 minutes.
- Add chicken and milk. Reduce heat and simmer for 10 minutes. Garnish with cheddar cheese.
