Tortellini Casserole

"You can use either fresh or frozen tortellini. The cooking time remains the same for either one. This is one terrific recipe I found in a milk calender here a few years back."

  • Melt butter in a large saucepan.
  • Add garlic and onion.
  • Cook gently 3- 4 minutes until fragrant and tender.
  • Sprinkle with flour.
  • Cook 3- 4 minutes longer but do not brown.
  • Whisk in milk.
  • Bring to a boil.
  • Add tomatoes, paste, herbs, salt and pepper.
  • Cook 5 minutes.
  • Meanwhile, cook tortellini in boiling, salted water for 3 min.
  • Add broccoli and continue to cook 5 minutes longer.
  • Drain well.
  • Combine drained tortellini mixture with sauce.
  • Add cheese.
  • Transfer to a 3 qt baking dish.
  • Sprinkle with grated Parmesan.
  • Bake in a preheated 350 oven for 30 minutes or until hot and lightly browned.

  1. My family, who loves cheese, really enjoyed this super cheesey casserole.I left out the thyme and used mozzerella cheese instead of the cheddar. Combined with the cheese tortellini,this was an instant success!Thanks for a great recipe.
     
  2. I enjoyed this meal, but thought it was a bit too "cheesy". Perhaps if I had used the meat tortellini instead of the cheese ones it wouldn't have been so overpoweringly cheesy.
     
  3. I agree with BC Jewel. The flavor of the sauce was great, but it was just too much cheese.(and I love cheese!) I couldn't finish my serving, but my daughter liked it. I guess we just prefer our cheese tortellini with butter and Parmesan.
     
  4. We really liked this recipe. It was quick putting it together and my 5 year old daughter really enjoyed helping mix the ingredients. The Broccoli really makes it.
     
  5. This recipe is amazing!! i was out of thyme, so substituted dried parsley, also subbed spinach for the broccoli, and used 1 c cheddar, and 1 c mozz. i also added 2 links sliced italian sausage. My husband loved it!! thanks for a great crowd pleaser!!

  2. This recipe is excellent. I used evaporated milk and spinach instead of broccoli. It was a hit with my uninvited dinner guests.
     
  3. This was pretty good - I misread the recipe and added tomato puree instead of pureed diced tomatoes. Would have been much better with the other - much less of a "cooked" flavor. I substituted mozzarella cheese and skipped the broccoli - just can't quite convince myself to eat broccoli...working on that. Reminds me of a homemade version of Knorr's Parma Rosa sauce.

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
