Tortellini Bean Soup

- 2 teaspoons vegetable oil
- 4 carrots, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried basil
- 1 bay leaf
- 4 cups chicken stock
- 1 (28 ounce) can whole tomatoes
- 8 ounces meat-filled tortellini or 8 ounces cheese-filled tortellini
- 1 cup black beans, cooked, drained and rinsed
- 1⁄4 teaspoon pepper
- 1⁄4 cup parmesan cheese
directions
- In a large saucepan heat oil over medium heat cook carrots, onion, garlic, basil and bay leaf. Stirring occasionally for 5 minutes.
- Add chicken stock and tomatoes, breaking tomatoes with back of spoon. Bring to a boil.
- Add tortellini return to boil.
- Reduce heat to medium heat cook stirring occasionally for about 10 minutes.
- Stir in black beans and season with pepper.
- Discard bay leaf. Ladle into bowl and sprinkle with cheese.

Calee! What a great soup you've posted! Very filling/satisfying. We added extra garlic and some red pepper flakes for a bit of heat, but that's only due to personal preference...it's great as is. This time we used meat-filled tortellini, whereas last time we used cheese...I think we prefer the meat, but perhaps that's due to the brand of pasta we bought. Love the parmesan cheese on top...yum! Thanks for a delicious new soup recipe that we will make often. (Served with whole grain french bread.)

WOW! I added meatballs for DH and this simple recipe was out of this world! I needed quite a bit more stock (and even subbed w/some water) but I think it's because I simmered it for awhile waiting for DH (and b/c of the meatballs). This is a new favorite--I made it 3 nights ago & I'm just about to start my next batch! Great job, Calee!
