Got this from an old Southern Living Cookbook. Used fresh tomatoes and cucumbers. This made a great summer evening salad. Very refreshing.

  1. Combine the first 5 ingredients, and toss gently.
  2. Combine remaining ingredients; mix well, and pour over vegetables. Cover salad and chill 4 to 6 hours.

We really enjoyed this recipe. I did use red wine vinegar, reduced water to 2 tablespoons, and added croutons. Very nice. I served your salad with grilled chicken. Thanks for Posting, Di;-)

This is really, really good. Wine wine vinegar was used with some dried tarragon being sprinkled over the salad. For half a recipe I used 1 tablespoon of sugar, 2 tablespoons vinegar and 1 tablespoon water. Since I was a little short on standing time, the vegetables were sliced super thin with the mandoline. Made for ZWT9.

One very forgiving recipe! Was in a rush this morning and forgot to add the onion when making this. Started to dish it up this evening and said hmmm thought this had onion. Went and check and yep I had blown it, but even without the onion this made a great side and DH thought the carrots added a pleasant change from the normal tomato and onion salad. I made without adding water. Will be enjoying again, thanks for the post.
