- 1 teaspoon oil
- 1 teaspoon butter
- 2 onions, chopped
- 2 celery ribs, chopped
- 1⁄2 cup celery leaves, chopped
- 1 carrot, chopped
- 1 (28 ounce) can tomatoes, cubed
- 8 cups beef broth
- 2 teaspoons onion soup mix
- 1⁄2 teaspoon Worcestershire sauce
- 1⁄2 cup macaroni, uncooked
- salt and pepper
directions
- Heat oil and butter.
- Add onion,carrots, celery and celery leaves and sauté until softened.
- Add tomatoes, Worcestershire sauce, onion soup mix and beef broth.
- Simmer for 45 minutes; add macaroni and cook on Low until pasta is cooked(app 30 minutes.).
- Taste and add salt and pepper.

This is one of my favourite soups and it turns out great every time i make it. I cook the macaroni but I don't put it in the soup anymore i just keep it aside and put it in the bowl and scoop the soup over it. I do this because the macaroni tends to suck up most of the liquid and this also changes the texture of the macaroni. Its good either way its up to you which you prefer. I usually cook it on the stove but now and then i will cook it in the slow cooker. Also any soup stock will work with this soup. Sometimes i make it with chicken or ground beef in it but mostly i like it without meat. All in all its a great soup.

This was great. The only changes I made was to add a bit of small-diced round steak to it and used a smaller pasta. The only thing I'd change next time would be to maybe leave out either a bit of the beef stock and sub with water or tomato juice or omit the onion soup mix, as the soup was bit salty for our taste. I've always had a herb garden; now I have containers on my patio with my must have herbs. It seems, everything tastes better with fresh herbs!
