This is the base tomato sauce for my Italian Meatballs. No matter what you add to it, more veggies, ground beef, chicken pieces, Italian sausage etc., you have a flavourful starting place.

  1. Sauté fresh veggies till softened then add remaining ingredients.
  2. Bring it all to a boil,then add meatballs or ground beef, Italian sausage, chicken pieces, spare ribs and simmer for a couple of hours.
  3. (Don't be shy to use fresh herbs in place of dried, an added handful fresh chopped parsley would go nicely too).

I just love to have this sort of thing in the freezer - this was so easy to do , great taste and great time saver down the track. Made for Holiday Tag.

Good tomato sauce. The peppers add a great taste. I only made about a third of the recipe and used it on pasta for lunch without adding any meat. I added the wine after the veggies but before adding the remaining ingredients and let it simmer for a couple of minutes. Before serving I added fresh basil and plenty of freshly grated parmesan.

This is a terrific base sauce. I am freezing it in portions so i always have some for a quick pasta, tasted it just with some country bread and ended up eating a 2nd lunch :)
