    I was messing with breakfast the other morning and I had all the ingredients and just couldn't decide what to is what I came up with!

      Preheat oven to 350F.

      Place tator tots in the casserole dish and drizzle butter over them.

      Place casserole dish in the oven.
    4. 4
      Cook bacon and chop up.
    5. 5
      (If you are going to add the onion, peppers, or mushrooms put them in the frying pan now and cook with a little bit of the bacon grease until cooked tender).

      Mix together the eggs and milk.
    7. 7
      Remove the pan from the oven and place the vegies in if you are adding them.
    8. 8
      Pour the egg mixture over all.
    9. 9
      Spread the bacon over the top, then put the shredded cheese over that.

      Place back in the oven and continue to cook for 30-40 minutes until done.

      WOW! This satisfied my family to NO end! Instead of tots, I just used cubed potatoes with olive oil and saved on saturated fat and cholesterol and I used those precooked bacon bits to make that a little healthier (and too. Thank you!!!

      Some in my house really liked this, others did not, so I'm averaging that out to three stars. I used the peppers and onions (from a frozen bag), and cheddar cheese. Even though the eggs had set, it was still a little mushy after baking, but after cooling for a while it firmed up. I served it with biscuits for an easy dinner. Thanks for sharing!

      This is a very tasty dish. I made it with onions green pepper and cheddar cheese. I think next time I will try it with the montery jack cheese. Thanks Tish
