  • 295.73 ml white American cheese, shredded (I buy a hunk at the grocery store deli and shred it myself)
  • 59.14 ml 2% low-fat milk or 59.14 ml whole milk
  • 7.39 ml pickled jalapeno pepper, minced (the ones used for nachos, in a jar)
  • 12.32 ml jalapeno juice, from the jalapenos above

  • Add all ingredients (in order) in microwave safe dish. Microwave on high for 1 to 1 1/2 minutes, stirring every 20 seconds.
  • Stir until smooth. If it seems too thin, keep stirring.
  • Serve with flour tortillas or tortilla chips.
  • For mild, leave out the jalapenos. IMPORTANT: Do not leave out the jalapeno LIQUID, that is what helps make the flavor.

  1. Mmmm...I changed the recipe up a little bit because I didn't have any jalapeno juice. I added spinach and tomatoes and some crushed red pepper. That gave it a kick. It is so good, too bad it's so fattening!!!

  3. I was really excited to try this, but it really had too much of an american cheese taste to me to pass for a mexican dip. I would probably try again with a different type of cheese as I really liked the jalapeno and jalapeno juice in the dip.
     
  4. This is an excellent recipe. I make a version of this quite often. Try using half and half instead of milk and add cumin.
     
  5. This recipe was sooooo simple yet awesome. If you have ever been to Shorty's or any other mexican restaurant and had espinaca dip, this is the recipe! I would recommend to add a little spinach or tomato to lighten the dip if it is too rich. Thanks for sharing!!!!
