Thai Coconut Custard

Directions

  1. Beat coconut milk, eggs, palm sugar and salt together.
  2. Cook in a double boiler, stirring constantly, until it resembles soft scrambled eggs.
  3. Pour into a small casserole dish.
  4. Bake at 350 degrees Fahrenheit for 30 minutes.
  5. Brown under a broiler.

Delicious! And easy. I had to be a little patient stirring over the double boiler, but other than that, nearly effortless. Will definitely make this again.
