- 453.59 g lamb, diced

Marinade
- 29.58 ml fresh oregano, chopped
- 14.79 ml fresh rosemary, chopped
- 1 lemon, zest of
- 29.58 ml olive oil
- salt & freshly ground black pepper, to taste

Salad
- 198.44 g feta cheese, sliced
- 14.79 ml fresh oregano, chopped
- 29.58 ml fresh parsley, chopped
- 1 lemon, zest of
- 1 lemon, juice of
- 1 small red onion, finely sliced
- 44.37 ml olive oil
directions
- Mix together the marinade ingredients and add the lamb cubes. Toss well and then skewer meat onto 4 metal skewers (broiler) or 4 wet wooden skewers (open fire).
- Arrange the sliced feta on a large serving dish and sprinkle over the herbs, lemon zest and sliced onion. Drizzle over the lemon juice and olive oil and season with salt and pepper.
- Cook the lamb skewers under a preheated hot broiler for about 6-8 minutes, turning frequently, until browned and almost cooked through. Do the same for an open fire. Remove from heat and leave to rest for 1-2 minutes.
- Serve the lamb with the salad along with plenty of crusty bread, if desired.
