It's so different and makes a great change from the same old sack lunch.
- 1 medium apple, grated
- 1 can tuna in water, drained well
- 1⁄4 cup chopped celery
- 1⁄4 cup purple onion, chopped
- 2 radishes, sliced thin
- 2 tablespoons low-fat mayonnaise
- Mix all together and serve on a lettuce leaf with crackers.
Delicious - DH was skeptical about the apple but he loved it too. Ate it on a sandwich. I didn't use radishes either (but I don't like them).
Yummy salad, this was my dinner last night and my lunch today. I didnt have any radishes so used a couple of green onions. delicious!
Wow, this is a really great recipe! Really fresh and light. The crunchy apple, celery, and radishes are the perfect pair with the soft and tender tuna. I doubled the recipe; the leftovers made a great workday lunch. I can't wait to make this again!
