Taco Seasoning and Taco Meat

"I threw this together because I wanted to make nachos. I figured I could make a better seasoning mix that wasn't all salt and junk I can't pronounce. Turned out pretty good. The Seasoning mix recipe makes enough for 4 pounds of ground beef. I would suggest making your own chili powder. If you've never tried to make your own, check out Recipe #225751 This recipe makes about a half cup of seasoning mix."

  • Taco seasoning mix.
  • Add all the dried spices and herbs except the dried minced onion into the bowl of your food processor. A blender will work in a pinch, but you'll have to wash it several time or else your smoothy will taste like tacos.
  • Mix on high for about 30 seconds.
  • Add the dried onion and pulse about ten times to mix in well.
  • Store in a zip top bag or jar.
  • Taco Meat.
  • Brown ground beef in a large skillet.
  • Drain fat from meat and add the 1/4 cup of seasoning mix. Mix seasoning into meat.
  • Add beef stock, cover pan and simmer on medium for 10 minutes or until the moister is absorbed.
  • Crumble up the ground beef so you have a small grain texture. I like to use a potato masher.

<p>I used to cook professionally, but got out of the business because it is a soul crushing, low paying job. If you want to hate cooking, run a hotel kitchen. Now that I don't have to do it for a paycheck, I cook for my friends and family as much as possible. I enjoy making everything from BBQ to Bur Blanc. I love mixing chocolate with spicy ingredients. I am rather new to baking, (only a few years) but I really love it and try to bake whenever I get a chance. I work offshore in the Gulf and I always sneak down to the galley to make stuff for the guys. I'm a huge fan of Alton Brown. I think the guy is a genius. I have tried so many of his recipes, and they all rock. Since finding this website and having a public place to post my recipes for others to review, I have become more conscientious about writing my kitchen experiments down. I still have yet to get my whole wheat pizza dough to paper, but I promise, it's on it's way.
