Sweet Potato and Ginger Pancakes (Can Be Gluten-Free)

ingredients
- 1 large sweet potato, grated
- 1 tablespoon of finely grated fresh ginger
- 1 egg
- 1 teaspoon baking powder
- 1⁄4 cup of preferred flour (I use brown rice flour)
- 1 teaspoon cinnamon
- 1⁄2 teaspoon cardamom
- 1 dash salt
- oil
directions
- - Mix all ingredients together in a medium sized bowl.
- - Spoon unto preheated generously oiled pan and press into small patties.
- - cook until lightly browned and flip over.
- serve and enjoy.
- I enjoyed them on there own but I could see these going really well with maple syrup.

It was simple, but I can't say I really like it. I usually love sweet potatoes, but the pancakes taste more like ginger than anything. I can hardly taste the sweet potato. =( If I did this again I'd up it to two sweet potatoes and take the ginger back to a teaspoon. I may also add some walnuts just for kicks.
