Sweet Potato and Ginger Pancakes (Can Be Gluten-Free)

"It's a sweet potatoe pancake recipe that's mildly sweet, perfect for breakfast. I cook sort of free-form, in other words I throw ingredients together and see how it turns out. Therefore, the ingredient portions are approximate. Hope you enjoy them, I did."

  • - Mix all ingredients together in a medium sized bowl.
  • - Spoon unto preheated generously oiled pan and press into small patties.
  • - cook until lightly browned and flip over.
  • serve and enjoy.
  • I enjoyed them on there own but I could see these going really well with maple syrup.

  1. It was simple, but I can't say I really like it. I usually love sweet potatoes, but the pancakes taste more like ginger than anything. I can hardly taste the sweet potato. =( If I did this again I'd up it to two sweet potatoes and take the ginger back to a teaspoon. I may also add some walnuts just for kicks.
