- 1 cup cornmeal
- 1⁄2 cup all-purpose flour
- 1⁄2 cup wheat flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 cup extra light in flavor olive oil
- 2⁄3 cup sugar
- 1 egg
- 1 cup buttermilk
directions
- Preheat oven to 400 degrees.
- Combine all ingredients to form a smooth batter.
- Pour into a lightly oiled 8 X 8 pan and bake for 30 minutes.

I enjoy cooking, especially when I can create something delicious that is also healthy. Daily exercise and a healthy diet are the emphasis in our house Sunday through Friday. Our reward is a day (Saturday) that we enjoy some of our favorite recipes that are less healthy but too delicious to give up.
