- 1 lb ground beef
- 1⁄2 cup dry breadcrumbs
- 1⁄4 cup milk
- 2 tablespoons chopped onions
- 1 teaspoon salt
- 1⁄2 teaspoon Worcestershire sauce
- 1 egg
- 1 cup brown sugar
- 2 tablespoons cornstarch
- 1 (13 ounce) can chunked pineapple
- 2⁄3 cup vinegar
- 2 tablespoons soy sauce
- 1 small green pepper
- 4 cups cooked white rice
directions
- Mix first 7 ingredients in a large bowl.
- Shape into balls and put into a 9x13 glass dish.
- cook in a 400 degree oven for 20-25 minutes, until brown.
- Meanwhile, mix brown sugar and cornstarch.
- Stir in pineapple with juice, vinegar, soy sauce.
- Heat to boiling, stirring constantly.
- Reduce heat and simmer 10 minutes. Stir in green pepper and pour over meatballs.
- Cook in a 350 oven about 30 minutes - until sauce is thickened and bubbly.
- Serve over white rice.
