Great with seafood, chicken, and rice paper and spring rolls.
- 60 ml white vinegar
- 100 g caster sugar
- 1 1⁄2 tablespoons water
- 1⁄4 lebanese cucumber, seeded, chopped finely
- Combine vinegar, sugar and the water in a small saucepan; stir until sugar is dissolved. Boil, uncovered for 3 minutes, cool.
- Transfer to serving bowl and stir in cucumber.
