- 453.59 g ground beef
- 1 egg, beaten
- 118.29 ml fine dry breadcrumb
- 29.58 ml finely chopped onions
- 3.69 ml salt
- 1.23 ml ground nutmeg
- 29.58 ml vegetable oil
- 2 (170.09 g) package cream cheese, cubed
- 177.44 ml milk
- 118.29 ml water
- 29.58 ml chopped fresh parsley
- 0.61 ml salt
- 0.61 ml dried thyme
- hot cooked noodles
directions
- Combine beef, egg, breadcrumbs, onion, 3/4 teaspoon salt, and nutmeg in a large mixing bowl; mix well.
- Shape into 1-inch meatballs.
- Heat oil in a large heavy skillet; add meatballs, and brown on all sides.
- Remove meatballs from pan; set aside.
- Drain drippings, reserving 2 tablespoons in skillet.
- Stir in cream cheese, milk, water, parsley, 1/8 teaspoon salt, and thyme into drippings; cook over medium heat, stirring constantly, until smooth and thickened.
- Return meatballs to skillet.
- Serve over noodles, if desired.

This was good. I also thinned out the sauce with a bit more milk (I used canned evaporated milk)to offset the cream cheese taste. I would probably double the sauce next time as well. Served over hot buttered egg noodles. Since I keep a stock of homemade meatballs in the freezer, this is a quick and easy one for me: just thaw and warm the meatballs and make the sauce! [This dish was very well received by my toddler, so that earned it an extra star!]

This got a wonderful review at dinner last night by my family. Flavorful meatballs and a very thick, creamy sauce. I gave it four stars instead of five only because I thought the cream cheese was a little too overwhelming for the meatballs. I would half the cream cheese next time and add something like cream of mushroom soup in place of the rest. But overall it's very good!
