- 2⁄3 cup butter
- 1⁄2 cup white sugar
- 3 eggs
- 1⁄2 cup cocoa powder
- 2 1⁄4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup water
- 1 teaspoon vanilla
- 2⁄3 cup sauerkraut (rinsed,drained & chopped)
directions
- Cream 2/3 Cups butter & 1/2 cup sugar. Mix well. Add 3 eggs. Mix well. Sift together 1/2°C cocoa, 2 1/4°C flour, 1 teaspoons baking powder, 1 teaspoons baking soda. Then add alternately 1°C water and end with the dry ingredients. Add 1 teaspoons vanilla and the 2/3°C sauerkraut that has been rinsed, drained & chopped.
- Grease & flour 2- 8" cake pans. Line pans with waxed paper. Bake @ 350 degrees for approximately 30 minutes. Ovens vary. Cake tests done when toothpick inserted comes out clean. Frost with your favorite icing.

Born in Kansas City, Kansas. Moved to Fairburn, Georgia when I was 7yrs old. I grew up with my mother always baking a cake for a wedding or birthday. Being the youngest of 5 kids, we always had a birthday to celebrate. My mom wasn't finished with a cake until she had some icing in her hair. She would bake wedding cakes for so many people but my mom was always running late. That drove me crazy!! I learned to always leave the house early and get to your destination 15 minutes before you were supposed to be there. Pet peeves of mine... people who are rude and act like their cakes are better than yours.
