Super-Circle Carrot Cake

• Serves: 40

ingredients

• 4 cups carrots, grated, packed
• 3 cups pecans, chopped
• 2 cups unsalted sunflower seeds
• 1 cup raisins
• 2 cups whole wheat flour
• 2 cups old fashioned oats
• 2 cups unsweetened dried shredded coconut
• 1 cup flax seed meal
• 1⁄4 cup ground cinnamon
• 2 tablespoons ground cloves
• 1 tablespoon salt
• 1 tablespoon baking soda
• 2 cups coconut oil
• 2 cups honey
• 1 cup crushed pineapple, drained
• 1 cup unsweetened applesauce
• 1 cup Greek yogurt (regular)
• 12 extra-large eggs, beaten
• 16 ounces cream cheese, softened
• 8 ounces unsalted butter, softened
• 2 cups unsweetened dried shredded coconut
• 1 cup honey
• 1⁄2 cup fresh lemon juice
• 1⁄2 teaspoon salt

directions

1. Prep first four ingredients.
2. Combine flour through baking soda in huge bowl.
3. Slowly melt oil in medium saucepan. Stir in honey. Remove from heat.
4. Combine pineapple through eggs in large bowl.
5. Preheat oven to 300°F.
6. Add oil mixture to egg mixture (without stirring).
7. Add wet mixture to dry mixture. Mix well.
8. Stir in first four ingredients.
9. Transfer to a 16x3" pan. Form layer that is thicker toward edge.
10. Bake two hours.
11. Blend remaining ingredients. Chill.
12. Cut cooled cake. Chill.
13. Frost just before serving.
