- 946.36 ml sweet corn, drained and chilled (I have used the canned mexicorn a couple of times for that real southwest flavor)
- 118.29 ml diced green pepper
- 118.29 ml diced red bell pepper
- 118.29 ml diced red onion
- 118.29 ml thinly sliced celery
- 177.44 ml avocado, peeled and chopped
- 236.59 ml mayonnaise
- 236.59 ml shredded cheddar cheese
- 118.29 ml diced tomato
- 236.59 ml crushed chili cheese flavor lay's Fritos corn chips
directions
- Combine corn, peppers, onion, celery, cheese and mayonnaise.
- Cover and refrigerate 30 minutes or until chilled.
- Stir in crushed chips, diced tomatoes and avocado just prior to serving.

I am married, have three children and two grandchildren. My youngest "oops" baby is just turning 17 and is going to be a senior in high school in the fall.. I love to cook and collect recipes.
