  1. Slice tomatoes about 1/4 inch thick.
  2. Spray skillet with cooking spray or oil. Use oil if you are Vegan or make sure spray is Vegan.
  3. Heat your pan until hot cook tomatoes over med heat until browned about 2 to 3 minutes each side.
  4. Sprinkle lightly with sugar and cook until carmelized about 1 minute each side.

I had four Roma Tomatoes, just barely red. I cut them lengthwise in 3 slices each. I used olive oil spray. I sprinkled regular white sugar on them and carmelized. I think if I make the next time, I would sprinkle brown sugar on them and let them set until the juices flow. Then fry and pour the reserved juices over them until absorbed.
