I would LOVE for something to be "missing" from the write-up of this recipe. Specifically, the it complete? Is it correct? The cake batter was oh-so-nice (I used an organic orange and added a few drops of orange oil to the batter) but the topping was extremely gooey and, even though I had doubts about the correctness of the ingredients list, I forged ahead anyway. The topping all sunk to the bottom! As it cooled, I figured I'd just be prying out the hardened goop with each "piece" I wanted to extract! The taste is good.....but I'll be trying a totally different topping next time! I really wanted this to be good since preparation was so easy..... I'll check back to see if anything changes!

  1. Oven preheated to 375 degrees F.
  2. In a medium size mixing bowl, cream the butter, sugar, egg and orange rind together.
  3. In a small bowl, stir flour, baking powder and salt together.
  4. Add orange juice and flour mixture alternately to the batter mixture, mixing well.
  5. Pour into a square or round 8x8" pan, greased, and sprinkle with the streusel topping ingredients combined.
  6. Bake for 30- 35 minutes.
