Orange Streusel Coffee Cake

ingredients
- 2 cups flour
- 1⁄2 cup sugar
- 2 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1 orange, zest of, grated
- 1 egg, slightly beaten
- 1⁄2 cup milk
- 1⁄2 cup fresh orange juice
- 1⁄3 cup oil (or less)

Topping
- 1⁄4 cup flour
- 1⁄4 cup sugar
- 2 tablespoons grated orange rind
- 2 tablespoons butter
directions
- Stir together the flour, sugar, baking powder and salt.
- Stir in orange rind.
- Mix together in separate bowl -- all the wet ingredients.
- Make a well in centre of dry ingredients and add wet ingredients.
- Mix until JUST blended.
- Prepare 8" round cake pan (greased and floured).
- Pour into cake pan.
- Sprinkle with topping.
- Bake at 350 degrees for about 30 minutes or until golden.

Very nice, easy to make basic. The orange flavor is subtle, and the cake is not very sweet. Good with coffee, afternoon tea. This is a pretty little cake, with the orange zest through it, and the streusal topping. I used skim milk and light olive oil, and baked it in a 9 x 9 inch square pan. Thanks for sharing this recipe.

Great cake, wonderful texture with good lift. The only change I made was to increase the orange zest to two big oranges worth. Thinking of replacing 2 tablespoons of the 1/2 cup of OJ with frozen OJ concentrate next time. I like orange :) I've made it three times, each time with a different topping. A cinnamon-sugar streusel adding finely chopped walnuts, a regular streusel with finely chopped almonds and drizzled with melted white chocolate, and an orange glaze. All were delicious. Thank you, this one is getting passed on, with full credit of course :) Ps. Best to use a very light hand when mixing. Overmixing makes for a tough cake. I use a spatula, folding and cutting, just until moistened.

My husband and I live in the "bush" and hour from the closest town. Life here is quiet, yet so much more busy than when we lived in the "city". We grow our own veggies, several kinds of berries, and grow lots of hard neck organic garlic. We have 60 chickens, 4 dogs, 1 cat, 1 bird. Quite the menagerie.
I make all my own breads, and sell them (along with the eggs). I have a group of friends whom I make extra goodies for.
