- 4 tablespoons white wine vinegar
- 3 tablespoons white balsamic vinegar
- 1 tablespoon shallot, minced
- 2 tablespoons Dijon mustard
- 1⁄2 teaspoon sweet paprika
- 1 tablespoon arugula, chopped
- 1⁄4 cup olive oil
- 1 teaspoon salt, to tast
- 1 cup arugula
- 1 cup spinach
- 2 cups field greens
- 3 navel oranges, sliced
- 1 small red onion, sliced thinly
- 4 tablespoons pine nuts
directions
- To make vinaigrette, combine vinegar, shallots, Dijon mustard, paprika, chopped arugula and olive oil in a small bown.
- Toss arugula leaves, spinach and field greens.
- Place greens on serving plates, top with orange slices and onion slices. sprinkle each serving with pine nuts and drizzle with dressing.
