Spinach Artichoke Casserole

The family really likes this recipe which I usually make on holidays. I usually make it with my recipe for Marinated Sesame Beef. Enjoy!

This was amazing! Super simple, and super flavorful! However I had a time..spreading..the cream cheese mixture on top. It wouldn't spread...so I just plopped it on and tried to spread it as best I could...it looked like dumpling, but it still was so delicious...who cares! Thank you for sharing this recipe! I am going to keep it and make it in the summer! xo LA :-)

  1. .Thaw spinach and drain the water. Drain artichoke hearts and save marinade for later. Chop artichokes.
  2. In a large frying pan melt butter with marinade from the artichokes and add the onion, cook until soft. Stir in spinach, artichokes, nutmeg, oregano, soup, eggs and pepper.
  3. Pour into casserole dish.
  4. Topping:.
  5. Mix together cream cheese, milk and parmesan cheese. Spread over spinach mixture.
  6. Bake uncovered at 325 degrees for 40 minutes.
