Spinach Artichoke Casserole

  • .Thaw spinach and drain the water. Drain artichoke hearts and save marinade for later. Chop artichokes.
  • In a large frying pan melt butter with marinade from the artichokes and add the onion, cook until soft. Stir in spinach, artichokes, nutmeg, oregano, soup, eggs and pepper.
  • Pour into casserole dish.
  • Topping:.
  • Mix together cream cheese, milk and parmesan cheese. Spread over spinach mixture.
  • Bake uncovered at 325 degrees for 40 minutes.

  1. This was amazing! Super simple, and super flavorful! However I had a time..spreading..the cream cheese mixture on top. It wouldn't spread...so I just plopped it on and tried to spread it as best I could...it looked like dumpling, but it still was so delicious...who cares! Thank you for sharing this recipe! I am going to keep it and make it in the summer! xo LA :-)
     
  2. I made this for Easter dinner for a side dish and am glad I did. Lovely flavors but the consistancy of the topping threw me a little. I think I would just want a mixture of mozzarella and parmesan cheese next time. Quite a tasty cassarole and loved the artichockes! Made for Spring PAC, 2010, P
