Spinach and Cannellini Beans

- 1 1⁄4 cups cannellini beans, soaked in water over night
- 4 tablespoons olive oil
- 1 slice white bread
- 1 onion, chopped
- 3 -4 tomatoes, peeled and chopped
- 1 teaspoon paprika
- 1 lb spinach, cleaned
- 1 clove garlic, halved
- salt
- fresh ground black pepper
- 2⁄3 cup cold water
directions
- Simmer the beans in water until tender, about an hour, and drain.
- Fry the bread in 2 T of oil until golden brown, set aside.
- Saute the onion in 2 T of oil until soft, add tomatoes and continue cooking over low heat.
- Add the paprika and spinach and cook until the spinach has wilted.
- Stir in the cannellini beans and season with salt and pepper.
- Using a food processor (or a regular old knife and cutting board), mince up the garlic and fried bread.
- Add to the spinach mixture, along with the water.
- Cover and simmer gently for 20-30 minutes (adding more water if needed).
- Serve with chunks of crusty bread.

I'm sorry but somehow, this just didn't make it for us. I used the bread crumbs, but they just seemed to make it grainy. The spinach needs to be chopped finely. Once done, my DH and I tasted it and could only say, "It's not very good." We added some more tomato sauce (actually some pizza sauce my DH had just made), Regiano Parmesan cheese, and Greek seasoning to the pot. Then, we pureed about half the pot. Still, no change. I put the pot into the fridge overnight knowing that some things get better after having time for the flavors to blend. I'm giving it 2 stars because with these changes, it went from "not very good" to "not too bad" but it's still not staying in the rotation.

Didn't have all the proper quantities, used canned cannelli and diced tomato, plus only had a few ounces of fresh spinach from a salad bag, and dry bread crumbs -- was a VERY tasty (and forgiving ) dish !! I am certain more spinach would enhance the flavor, but DH and I enjoyed it as served ! Was a good side to the LAST piece of fresh, flash frozen Alaskan salmon filet, and a small piece of Mahi-Mahi. Thanks, Jajaja, for posting a new taste sensation !
