- 118.29 ml ripe olives, cut into small wedges
- 473.18 ml raw cauliflower, thinly sliced
- 118.29 ml green bell pepper, finely chopped
- 59.14 ml chopped pimiento
- 44.37 ml chopped onions
- salt (optional)
- 59.14 ml vinaigrette, to taste (or your favorite salad dressing)
- lettuce leaf, for serving
directions
- Combine olives, cauliflower, peppers, pimientos, onion and salt in a large bowl.
- Add vinaigrette and mix lightly.
- Cover and refrigerate for several hours.
- Just before serving, toss gently to combine ingredients.
- Spoon cauliflower mixture onto lettuce leaves.
