While DH and I really enjoyed these veggies, DD did not. I guess we will save this recipe for those nights we are home by ourselves. I used mexican blend cheese and some asiago on top because that is what I had on hand. Served with grilled chicken.

  1. Saute zucchini, pepper and onion in a large skillet in oil over high heat 2 minutes; stirring frequently.
  2. Add corn and seasonings; continue cooking 2 minutes or until heated through.
  3. Top with cheese; cover.
  4. Cook 1 minute or until cheese is melted.
