Meatballs
- 453.59 g ground turkey
- 1 large egg
- 354.88 ml oatmeal
- 4.92 ml red pepper
- 4.92 ml cumin

Soup
- 4.92 ml Mexican oregano
- 473.19 ml dark beer
- 396.89 g can chicken broth
- 226.79 g can rotel diced tomatoes and green chilies
- 226.79 g can tomato sauce
- 432.33 g canned black beans
- 9.85 ml black pepper
- 2 chipotle chiles in adobo
- 1 g Sweet 'n Low

directions
- Mix the first five ingredients.
- Shape into balls. This will make 12-14 large meatballs. If you like smaller, it should make about 24 meatballs. Caution: the meat will be sticky. Don't worry.
- PLace meatballs on baking sheet lined with parchment paper. Bake at 350 for 15 minutes. The meatballs will be dry looking, but that's okay. They will moisten in the soup.
- Drain and rinse black beans.
- Add oregano, ale, rotel, black beans, pepper, meatballs, chicken broth, tomato sauce, and sweet and low to crock pot.
- Dice the chipotle chilis. Caution: if you like spicy, use 2-3 chilis. If you like mild, use only one.
- Cook in crock pot on LOW for 3 hours.
- Ladle into soup bowls.
- Garnish with a dollop of sour cream, sprig of cilantro, and a couple of tostada chips.
- Open your last dark ale and drink.
- Sabroso!

I was intrigued by this recipe and had to try it. I'm glad I did, it was truly unique (hubby's word) and quite delicious! The dark beer flavors this with an almost mysterious quality, bringing back memories of my journeys through the Los Tuxlas mountains of Veracruz Mexico where brujos (witches) are said to reside! Something about the darkness of the beer in addition with the smokiness of the dried chipotle chile (I used dried instead of canned). My choice of beer was Black Butte Porter from hubbie's stash. Also in lieu of the Rotel's I used one can of diced tomatoes and 1 small can diced green chiles. The 2 tsp of pepper seemed high, so I seasoned up the soup with a combination of salt, pepper, and lots of garlic powder (plus a few garlic cloves tossed in). For sweet n' low I used brown sugar. Served with all of the sides AND one avocado. Overall a truly unique and special dish! Thanks westtextazzy!
