Soft and Chewy Rice Krispies (Crispy) Treats

  1. Melt margarine in a large pan over medium heat.
  2. Melt in marshmallows and stir continuously until smooth.
  3. Add vanilla (be careful it doesn't splash on you).
  4. Without removing from heat, add cereal. Stir until cereal is completely covered with marshmallow mixture.
  5. Pour into a greased (spray Pam works great) 9x13 pan. Let cool 2 minutes. Press flat with greased hands. Cool completely and cut into squares. Enjoy!

Ooh, yummy. I never thought to add vanilla before, but it completes the recipe perfectly. The trick is to take your marshmallows off the heat before they're all the way melted, and just stir the last lumps until smooth. If you overheat your mm's then you'll have hard bars. Learned that the hard way. Thanks for a great new idea on an old favorite.

Excellent! I looked at the reviews and followed the advise given here. Was totally worth it! I adjusted the recipe in the following way:<br/>1/2 stick butter<br/>A little vanilla (I didn't measure)<br/>15oz marshmallows<br/>7 cups rice crispies (I used 4 cups rice crispies and 3 cups "fruity pebbles" as these were for a birthday treat, oh and I used off brands of everything and they turned out fine!)<br/>I took the marshmallows off before they were 100% melted so no scorching or hard treats. I used wax paper instead of oil in one pan and the spray oil in another as I made two batches of these. I would use the wax paper again, they came right off and it was much easier clean up! I also wet my hands as suggested by another reviewer, and that was a GREAT help, they didn't stick to my hands at all after I did that! Then for an added bonus I got some white chocolate and dipped them in it and put sprinkles on top :) They were a big hit for my daughters treat for her birthday at school. Thank you so much! As someone who had never made rice crispy treats before, this was an easy and SUPER yummy recipe! Thanks!

The krispie treats were still soft, chewy, and marshmallow-ie, even after I added an extra cup of the cereal. I used real butter rather than margarine, and probably added just 15 ounces of the marshmallows (one 10-oz. bag plus half of a bag, 5-oz.). I always buy the Millville Crisp Rice Cereal from Aldi's whenever I make krispie bars, as they are identical (taste and texture-wise) to the Kellogg's Rice Krispie Cereal, plus a better buy price-wise. Like the original recipe, I removed the pan from the stove after the marshmallows were completely melted, then stirred in the cereal, and poured the gooey mixture into a buttered pan rather than using Pam from a spray can. I ended up with 24 (2-inch squares). Next time I may try other flavored extracts in place of the vanilla, just for the heck of it. Delicious bars, excellent recipe, and thank-you wyojess for sharing the recipe. This one's a keeper!
