- 6 ounces green fettuccine
- 1 tablespoon olive oil
- 2 cups sliced mushrooms
- 2 tablespoons sliced green onion tops
- 1⁄2 cup bottled clam juice
- 14 ounces peeled and deveined medium shrimp
- 1⁄2 cup plain low-fat yogurt
- 1⁄4 cup light sour cream
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon cayenne pepper
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon white pepper
- 1⁄4 teaspoon dried thyme, crushed
- 1⁄4 teaspoon dried oregano, crushed
- 1⁄4 teaspoon onion powder
- 1 ounce grated fresh parmesan cheese
directions
- In large pot of boiling water, cook fettuccine 10 – 12 minutes, until al dente. Drain and keep warm.
- In large non-stick skillet, heat olive oil. Add mushrooms and 1 tablespoons green onions. Cook about 5 minutes or until mushrooms are just tender.
- Add clam juice and bring to a boil.
- Add shrimp and cook just until shrimp are pink. Remove from heat.
- Add yogurt, sour cream, and seasonings.
- Serve over cooked fettuccine noodles and sprinkle with Parmesan cheese.
