This is a nice salad recipe that I got out of Family Circle Magazine. It makes a really nice summertime lunch.
- 12 ounces baby spinach leaves
- 1⁄4 cup light balsamic vinaigrette
- 1⁄4 lb small shrimp (cooked)
- 1 shrimp deviled eggs recipe
- Place spinach leaves in salad bowl and toss with vinaigrette dressing.
- Season to taste with salt and pepper.
- Garnish with shrimp and deviled eggs.
