- 118.29 ml water
- 354.88 ml sugar
- 3 eggs
- 295.73 ml oil
- 414.03 ml flour
- 295.73 ml bananas, over-ripe and mashed
- 1.23 ml salt
- 1.23 ml baking powder
- 2.46 ml baking soda
- 118.29 ml macadamia nuts, chopped
- 295.73 ml crushed pineapple, drained
directions
- Mix oil and sugar together thoroughly. Add bananas, eggs and water.
- Sift dry ingredients and blend into mixture. DO NOT over-mix.
- Dust macadamia nuts with flour.
- Fold dusted nuts and pineapple into mixture.
- Lightly grease and paper line 3 mini loaf pans.
- Pour batter into loaf pans.
- Bake at 350 for 1 hour or until firm.
