  • Preheat oven to 350,& lightly grease& flour 2 8-inch loaf pans.
  • In large bowl,combine flour,sugar,baking soda,cinnamon& the salt.
  • Stir in walnuts.
  • In separate bowl,mix eggs,oil,banana,vanilla& pineapple until well combined.
  • Add wet ingredients to dry ingredients,stir just until moistened.
  • Pour equal amounts into pans.
  • Bake about 50 to 55 minutes or until toothpick in center comes out clean.
  • Cool for 10 minutes on racks;remove from pans and continue cooling.

  1. Very good recipe, makes a nice wholesome looking bread. I cut the recipe in half to make one loaf and it only took 45 minutes to cook. I mashed 3 bananas which was a little over a cup but I put it all in anyway and it was fine. This makes a nice change from plain banana bread and I'll make it again.
     
  2. Yummy & moist. I Substituted 1/2 Cup oil with 4oz cinnamon applesauce & deleted the cinnamon (I’d probably add next time), I only had 2 small bananas & had crushed pineapple from 14oz can, so less banana & more pineapple, but was good. Also used Pecans.
     
  3. Wonderful recipe with these changes I made: 1/2 cup oil, 1/2 cup unsweetened apple sauce, 1 cup of sugar (not 2) I also used 1 1/2 cups almond flour and 1 1/2 cups regular flour. Delicious! Moist! Sweet!

  5. We used half the amount of sugar (1 cup) and canola oil (1/2 cup). It turned out to be quite delicious. Adding more of these ingredients would only make it less healthy.

  1. Amazing recipe! I too changed it just a bit, I substituted 1/2 cup of pineapple yogurt for 1/2 cup of oil. I've also made it exactly like the recipe and both are very very tasty and loved by the whole family AND co-workers!
     
  2. I made these yesterday and hope you don't mind that I changed a few things.... I hesitated posting because it was different. However, they were still wonderful and loved by all... so I thought maybe someone else might like to make the same changes.. I used whole wheat flour instead of all-purpose white.. same amount. I used Splenda for the sugar.. same amount. Everything else was the same... I made 8 mini loaves and it was the perfect amount. Thanks for the recipe....
     
  3. This made the best banana bread! Good banana flavor with just a hint of pineapple. I substituted 1/2 cup plain yogurt for 1/2 the oil and used coconut instead of nuts. Thanks for posting!
     
  4. I love finding a delicious bread made with oil instead of butter...and this one is truly delicious. I followed the recipe exactly, but it baked in 70 minutes in my convection oven. I'm glad I chose this recipe to make to send to my Dad...he'll love it.
     
  5. This is the banana bread I've made for years and it is wonderful. From the Ultimate Southern Living Cookbook. Can sub 2 c grated carrots for 2 c mashed bananas (bake only 60 min) or sub 2 c coarsely shredded zucchini for 2 c mashed bananas. Also can use pecans instead of walnuts. I've made all combinations, all are excellent and very moist. I usually put one loaf in the freezer. This is a good choice to make for gifts during the holidays.
