ingredients
- 2 1⁄2 cups flour
- 1⁄4 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup butter, cubed
- 3⁄4 cup buttermilk (1 c. milk or 1 tbsp lemon juice)
- 1 egg
- 1⁄2 dried cranberries
- 1 teaspoon lemon peel
directions
- 1. Preheat oven to 350*.
- 2. Mix together first five ingredients in a large bowl.
- 3. Buttermilk and egg; whisk together in a small bowl. Fold into dry ingredients.
- 4. Fold last two ingredients into batter.
- 5. Place dough out and form into a circle.
- 6. Cut into 8 pieces (like a pizza).
- 7. Bake for 15 minutes.

Big, fluffy scones with a lovely lemony aroma. My dough was very sticky so I just added about 2T. of extra flour and kneaded a bit more. Wonderful for breakfast. 15 minutes cooking time was a bit short for mine so I baked them 5-7 mins more, then left them in the hot oven with the door cracked open. Made for Alphabet Soup tag.
