Sausages in Red Wine

- Melt lard in an ovenproof casserole dish and fry sausages until brown. Remove sausages from casserike and add bacon cubes and onions. Fry until brown. Sprinkle flour over mixture and pour in red wine. Return sausages to casserole and add garlic, bay leaf, thyme, and season to taste. Cover and simmer gently for 30 minutes.
- Meanwhile, add oil to a frying pan and brown mushrooms. Stir mushrooms into casserole after it has simmered for 30 minutes and cook for a further 20 minutes without lid. Serve with mashed potato.
