"On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share"

  • Wipe beef with a damp clothe.
  • Place in a deep 10 inch container.
  • Add vinegar and seasoning to beef, add enough water to cover.
  • Place in refrigerator , covered, for 12-18 hours.
  • Drain beef, reserving 1 cup of liquid.
  • Mix flour with salt, sprinkle over beef.
  • Heat shortening in heavy kettle or skillet.
  • Add beef, cook until lightly browned on all sides.
  • Turning, place rack under beef, add 1/2 cup of reserved liquid.
  • Cover, cook over low heat for 3 hours or until tender.
  • Add additional liquid if necessary.
  • Prepare gravy, adding sugar to addltional flour.
