this is a recipe of an old friend Jose Cordova. My famly likes it on pulled pork. Also this is a Tyler Florence recipe of food 911.
- 3⁄4 lb tomatillo
- 1 jalapeno, stemmed
- 1 small onion, quartered
- 4 cloves garlic
- 1 tablespoon salt
- 1 teaspoon dried cilantro
- 2 limes, juice of
- simmer tomatillos, onion, jalapeno, garlic with salt in 3 to4 cups water for 6 to 10 minutes until tomatillos are soft.
- blend the vegs with the cilantro and lime juice and about 1/4 cup of the cooking liquid to the coarseness you like.
- taste and adjust the seasoning with more lime juice, salt,or cilantro.
I used this to make a tomatillo rice. I didn't use cilantro. I put the pureed mixture back in the pan then added some chicken boullion and 1 1/2 cups rice and cooked until the rice was done. It was easy and good.
