  • simmer tomatillos, onion, jalapeno, garlic with salt in 3 to4 cups water for 6 to 10 minutes until tomatillos are soft.
  • blend the vegs with the cilantro and lime juice and about 1/4 cup of the cooking liquid to the coarseness you like.
  • taste and adjust the seasoning with more lime juice, salt,or cilantro.

  1. I used this to make a tomatillo rice. I didn't use cilantro. I put the pureed mixture back in the pan then added some chicken boullion and 1 1/2 cups rice and cooked until the rice was done. It was easy and good.
