- 6 ounces smoked atlantic salmon
- 2 large hard-boiled eggs, sliced
- 1 pint or 1 pint cherry tomatoes
- 2 heads radicchio (approximately twenty leaves)
- 1⁄4 head red leaf lettuce
- 1⁄4 head bibb lettuce
- 1 bunch romaine lettuce hearts
- 1⁄4 cup fresh basil leaf
- 1⁄4 cup fresh parsley, chopped
- 4 tablespoons shredded parmesan cheese
directions
- Wash and dry greens. Shred, sala-style, into large bowl.
- Shred salmon with a fork and add to the greens.
- Add sliced egg, tomatoes and parmesan and toss. Serve cold.
- For dressing try Honey-Mustard Vinigrette with Dill.
